Fall is a beautiful season and there’s something about pumpkin and squash patches that draws me towards them. I love the different vibrant colors, shapes and flavors and can’t resist buying 1 or 3 on my grocery trip.
Have you tried my Roasted Butternut Squash and Quinoa Salad yet? My friends and family are still talking about it!
This particular one is a Red Kuri squash and can be used in a variety of ways. I was quite surprised that it wasn’t difficult to cut, but you’re going to have to wait until my next post to see what I made with it 🙂 I have 4 more types of squash sitting on my kitchen counter…just sayin’!
