I really love spinach! The bonus is that it’s a nutrient powerhouse that’s packed with vitamins, minerals, antioxidants and has unbelievable health benefits.

Spinach is Great Raw

I love it in salads! You can toss torn baby spinach leaves together with other salad greens, or pair it with roasted butternut squash, dried cranberries and cooked quinoa, like the one I have pictured!

And Cooked!

Don’t forget that you can add spinach to soups too! One of my favorite soups is Soul Soothing African Stew. And there’s spinach in my recent recipe for Baked Spaghetti Squash Lasagna – just delicious.
