Have you ever bought a packaged salad kit?
There’s no shame in it! If it makes your life easier, encourages you to eat salad and you enjoy eating it, then why not? There’s a product sold at Costco called Sweet Kale Chopped Salad (produced by Taylor Farms) that Charles and I really like. Maybe you’ve bought it too?
In the salad kit you’ll find: chopped broccoli, kale, Brussels sprouts, green cabbage and radicchio. Also included are packets of dried cranberries, roasted pumpkin seeds and poppyseed dressing. YUM!
When I have a big crowd for supper, I use the whole salad and all the goodies that come with it. But, when it’s just the two of us for supper (or me alone), I’ll take out a bit and have the rest during the week. There’s only so many times that I could eat it as is. Don’t get me wrong, I love the veggies in the salad, but when I eat it all week it just becomes too much of the same thing. My solution? I add some PIZAZZ to the salad. Easy to do and you’ll have a brand new salad that gives you a fresh taste and new textures.
Here are some ideas that can put some PIZAZZ in your salad:
- Add protein: crumbled feta, goat cheese, grilled chicken
- Add fresh fruit: blueberries, strawberries, peach slices
- Change up the dried fruit and try chopped dried apricots, dates or figs
- Add fresh veggies that have bright colors (not green!) like yellow beans, different colored baby tomatoes, red pepper slices, shredded carrots
The salad is fabulous on it’s own and delicious when you add your own touches to it too! It’s just another way to keep mindful healthy habits in check 🙂
