Have you discovered French green beans (aka haricots verts) yet?

My husband Charles loves to bbq and it’s no different when we’re on vacation in Florida. This year a few of our good friends came over for dinner on New Year’s Eve and Charles made one of his famous bbqs! Everyone brought something to go with our delicious supper. We had chicken, salmon, steak, plenty of salads, roasted potatoes-there was so much food! Although we didn’t need another side dish, one of my friends brought over a package of organic French green beans that she wanted me to do ‘something’ with.

French green beans are so healthy and are often forgotten. Although they are delicious steamed with a little salt and pepper, I decided to make them another way. By now I think you know that I love roasted vegetables, but I can’t remember ever roasting green beans. This was a huge hit and such an easy side dish. The leftovers were great tossed in a salad the next day too.

Roasted French Green Beans

Ingredients:

  • 1 pound of French green beans
  • 1/2 of a Vidalia onion, cut in slices
  • 2 garlic cloves, chopped
  • 1 tbs. olive oil
  • Salt and pepper, to taste

Directions:

Preheat oven to 375°F. Line a baking sheet with parchment paper and set aside.

Wash and trim off the ends of the beans. Dry well and place in a large bowl. Add the onions, chopped garlic, olive oil, salt and pepper and toss until coated well.

Place on the prepared baking sheet in a single layer and roast for approximately 25-30 minutes. Check occasionally and toss at halfway point.
