How you may ask? I have gotten into the habit of freezing extra cooked quinoa in baggies and I did that even while I was on vacation in Florida. Remember that frozen bag of vegetables that I bought at Trader Joe’s and blogged about the other day? Here’s the easy recipe of how I used it!

Freezing cooked quinoa is the way to go! You’ll always have some stored away for times that you want to make a last minute quinoa salad or to add to other veggies, in soups, in cooked cereal, in place of breadcrumbs or chili dishes. Endless possibilities, but it all starts with being prepared.

Quinoa Made Easy!

Ingredients:

  • 1 cup cooked quinoa
  • 1 bag of frozen vegetables (I used Trader Joe’s Soycutash)
  • 2 tbs. olive oil
  • Juice from 1/2 of a fresh lemon
  • Salt and pepper, to taste

Directions:
Remove the cooked quinoa from the freezer and let thaw. Take your bag of frozen vegetables and thaw according to the package directions.

Whisk together the olive oil, lemon juice, salt and pepper in a small bowl.

Mix the cooked quinoa and thawed vegetables together and add the dressing. Serve at room temperature.
