Does this not look insane? And I made them to boot!

It was my husband’s birthday and I was looking for something that I could make that was easy. Cookies are easy.

Eating just 1 or 2 cookies is NOT easy!

Sweets are my thing and while I may say, sure have one or two cookies, it isn’t always easy to do that. Do you find it easy? Sometimes I do, and sometimes I just don’t.

I’ve always stood behind my philosophy of not being on a diet. When you are deprived of ANYTHING that you love, more often than not you end up giving in to temptation and taking 1 cookie. But how often did that lead to 2, then 3 or more cookies and everything else that wasn’t nailed down? How would that make you feel after? It always made me feel like I’ve blown it, failed at another diet attempt and it just made me eat more and mad at myself. Ummm did you ever feel like that too?


Stop feeling sorry for yourself or like you’ve fallen off the wagon and will have to starve the next day to get back on track. If you’re not dieting, there’s no wagon to fall off of, is there? And again, what’s your goal? Is it to diet or to learn how to eat healthier and making it work for you with some indulgences now and then?

Mini Mini Mini is where it’s at!

This fabulous Chipits recipe makes 48 cookies, but I made them smaller and got 68!!! That doesn’t mean I’m going to eat 68 cookies, but it does mean that the fat, sugar, carbs for each cookie is less than the original size so if you do indulge in 2 or 3 cookies, it’s not off the nutritional charts and the end of the world! How many times have you had a ‘diet’ version of a dessert which wasn’t satisfying? Did you feel deprived? Did you eat a whole bunch of stuff anyways? How did it make you feel? Guilty? It doesn’t have to be that way. If you indulge every so often with something real and yummy, it will help you maintain healthier lifestyle goals and eventually not succumbing to an ‘all or nothing’ attitude by learning how to manage these type of situations. Think about it 🙂
