A salad is not always just a salad! If you want a change of pace and don’t want to see another bowl filled with various lettuces, tomatoes and cucumbers, experiment and try something new.
Open a can of hearts of palm, rinse well, cut them into rings and place in a serving bowl. Then take some cherry or grape tomatoes, cut them in slices and add it to tomatoes. I totally believe that your food should be appealing so if you have different colored tomatoes, use them! Next – add fresh cubes of avocado to the bowl.
This salad took 5 minutes. All that’s missing is a splash of balsamic vinegar and some fresh basil. And look at you – hardly any time spent in the kitchen and you now have a fresh salad that’s bursting with color and so healthy! Pretty impressive for those of us who do not like to spend all day preparing food, but like to eat:)
One more thing – if you haven’t already, it may be time to put ‘hearts of palm’ on your grocery list!
