I love Friday night dinners because my dining room table has lots of faces around it:) Our supper meals are usually the same – a huge green salad, a new ‘healthy recipe’ that I’m trying out, a chicken dish, salmon (or another fish) and roasted potatoes.
There’s never any complaints about the menu, but sometimes there are suggestions. One time Tamara told me that she’s getting kinda bored of having potatoes every week. It was duly noted and although I change up the flavor of the potatoes by using different spices, I get it!
This past week, I didn’t serve the expected potatoes and butternut squash took it’s place! What a nice change and a yummy taste. I peeled and sliced the squash into half moon shapes (the best that I could!) and seasoned it with a little olive oil, some ground nutmeg, a sprinkle of cinnamon and a little salt and pepper. I roasted it for about 45 minutes (oven set to 425°F) in the afternoon and served it at room temperature. Nothing was left!
Just a little food for thought and ways to change things up without too much fuss.
