Do you want to add another way to your collection? Of course you do!!!

Last weekend we entertained and had some of our friends over for dinner. One of the side dishes was potatoes. I usually make roasted potato wedges in the oven, but I was going to be using it to make fish (baked miso cod is the best!) I needed to have another plan because I didn’t want to make them in advance. My husband Charles suggested that we cook them on the barbecue grill, so we did!

Here’s how I prepared them: I cut 4 slices into each raw potato, being careful not to cut right through it. I then put sliced Vidalia onions inside each space, seasoned it with salt and pepper and a little drizzle of olive oil on top. Then I tightly wrapped each potato separately in aluminum foil and we cooked them on the grill for about 1 1/2 hours. The time will vary depending on the size of the potatoes you are using, so check them after 1 hour.

This was a no frills recipe and the potatoes were absolutely delicious. My company loved them and so did I!
