It’s a crazy concept, but you really don’t have to slave over the stove to make an amazing meal! This fish recipe is so easy and I’m positive that you would have all the ingredients in your pantry. Ok, you might have to buy a piece of cod, but everything else should be a staple in your home.
I made this for Friday night and I think I was more proud of the fact that when I lifted it from my Pyrex baking dish to put on a platter, it didn’t break!!! YAY!!!
Seriously – delicious and moist and even if you don’t let it sit a while in your fridge, it will still be yummy. Try it and you’ll see:)

Herb Baked Cod
Serves 3-4 people
- 1 lb. cod fillets
- 2 cloves garlic, minced
- 1 tbs. combined dried herbs – I used thyme, oregano, marjoram and basil
- 1 Hungarian paprika
- 1/4 tsp. each of sea salt and ground pepper
- Juice from a fresh lemon
- 1 tbsp. extra virgin olive oil
Preheat the oven to 400F°
Place the fish in a 9×13 glass baking dish that has been lightly greased with olive oil.
Mix together the minced garlic, herbs, paprika, salt and pepper in a small bowl. Sprinkle the seasonings over the fish. I prepared my fish up to this point earlier in the day, and let it sit covered in my fridge. When ready to bake, drizzle with the lemon juice and olive oil.
Bake for 18-20 minutes until the flesh is opaque in color and flakes easily. Enjoy!!!
