I dunno…maybe my son Jarred is right and I have an obsession with butternut squash! I use it often in recipes and usually there’s one sitting on my kitchen counter.
A while ago when I was grocery shopping (not at my usual store) I spotted a bag of frozen butternut squash. Although I have always used fresh, I thought that this was an ingenious idea and of course I had to buy a bag!
What an incredible time saver!!! Frozen butternut squash are already peeled, diced, washed and ready to cook when you are. Roast it, add it to soups and in casseroles. The possibilities are endless.
