I didn’t! It’s a daikon radish and although I’ve seen it in grocery stores, I have never ever paid any attention to it nor have I even given it a second thought. That is, until I had it in a salad!

A little while back I was at a restaurant and had their special salad bowl. It had all types of spiralized veggies in it,  but one of them I just didn’t recognize. The waitress told me that it was a daikon radish and then I knew that I had to find out more about this vegetable.

Daikon is used in many Asian dishes and can be eaten pickled, raw or fermented. It has many health benefits including its ability to help in reducing certain types of cancer, it helps to boost the immune system, helps to reduce inflammation, it improves digestion, detoxifies the body, strengthen bones and helps aid respiratory issues. I know – just because things are healthy and are good for us, doesn’t mean that we necessarily eat them!

But, I was on a mission to try it. The other day I saw one in the grocery store so I figured that it was time to investigate and use it in a salad! Look for my creation in Monday’s post!! It has a nice crunch and kick to it:)
