‘Isa Does It’ has to be one of my favorite go to cookbooks for inspiration and feel good recipes. Yes, her cookbook solely features vegan recipes, but I’ve always believed that variety is the spice of life and you don’t have to be vegan to enjoy these muffins or any of her recipes!
While thumbing through some of my cookbooks I came across one of Jamie Oliver’s recipes for a whole chicken that he stuffed with a fragrant couscous. Hmmm, I had a whole chicken, I like couscous, why not?
Quinoa is still a huge mystery to some and to be honest, once you have perfected how you cook the quinoa, the rest is a piece of cake:) I have tested a few variations and if you want easy, fluffy, no hassle quinoa, try my instructions that are in the recipe below.
