Another simple salad that takes 5 minutes to make! I was having friends over for dinner the other night and I felt that I needed to add another salad. This is so easy to put together and the ingredients don’t have to be accurate-you’re not baking a cake!
With the holidays around the corner, I find that adding bright salads like this one are great to include. Not only do they add variety, but I find that having healthy choices available really helps me not to over indulge in all the other ‘goodies’ that are on the table-this tip may help you too! Artichoke Hearts Salad
- 1 can of artichoke hearts, rinsed and cut into quarters
- Grape tomatoes or small cherry tomatoes, cut in half
- 1/2 cup red onion, finely chopped
- 3 tbs. olive oil
- 1 tbs. balsamic vinegar
- 1/2 tsp. each of dried oregano and basil
- Salt and pepper, to taste
Put the artichoke hearts, tomatoes and red onion in a bowl and mix well.
Whisk together the olive oil, balsamic vinegar and spices in a small bowl. Pour, as needed, into the vegetables and mix well. Adjust the seasonings if you have more vegetables in your salad.
Make ahead and refrigerate. Serve chilled or at room temperature.
