I get it – when you come home from the grocery store you’re exhausted and just want to put everything away because you have other things to do. 10 minutes. That’s all it took for me to peel a 5 pound bag of carrots and then another 10 – 15 minutes to cut them up and put them in a clear container. The next step is crucial if you are trying to establish a new habit. Place the container front and center on your fridge shelf because out of sight, out of mind!

Why do this? It’s all about being prepared. When you have quick and easy healthy snacks available it can be your ‘go to’ instead of grabbing a handful of chips or cookies. Pair it with some other veggies and a dollop (a tablespoon or two) of hummus and you will have a satisfying snack that will make you feel great about your choice! This is such a great late afternoon snack – you know what I mean, the bewitching hour!
Even healthy foods have a portion size so don’t eat all the carrots in one shot! Besides the fact that your body needs a variety of other foods, one of the side effects from eating too many carrots is that your skin may turn a nice shade of orange. Trust me on this. When I was 23 I was eating carrots non-stop – about 5 pounds every other day. I know, way too much but I was young and on a crazy fad diet. Well, I didn’t lose any weight from my carrot consumption, but I did turn orange!!
Life gets busy. Take the 25 minutes to prep some carrots. Your body and mind will thank you. You are so worth it!
